The meat is cooked with spices and curd, which tenderises the meat as the flavours get infused into it. The gravy has flavours of Poppy Seeds (Khus-khus), Cardamom and Dry Coconut which make it an extremely delectable dish. Nowadays there are many variations observed in this dish in Rajasthan. Originally it was made with hunt meat by the Royal Kings of Rajasthan and ingredients were used as I have described in the video. Nowadays some people also call this recipe as "Safed Maas" and use milk to give it a white texture. But earlier use of curd was most popular. Milk is optional. Preparation Time - 15 mins Cooking Time - 1 hour Servings - 6 to 8 persons Ingredients:- 1. Chicken (चिकन) - 1.25 kgs 2. Groundnut Oil (मूँगफली का तेल) - 100 gm 3. Clarified Butter / Desi Ghee (घी) - 80 gm 4. Cinnamon Stick (दालचीनी) - 3 5. Black Cardamom (बड़ी इलायची) - 2 6. Cloves (लौंग) - 5 7. Whole Coriander Seeds (धनिया के बीज) - 10 gm 8. Red Chilli Whole (लाल मिर्च) - 15 9. Black Pepper (काली मिर्च) - 15 10. Royal Cumin (शाही जीरा) - 1/2 tbsp 11. Ginger (अदरक) - 1 stick 12. Salt (नमक) - 2 tbsp 13. Melon Seeds (मगज के बीज) - 1 tbsp 14. Curd (दही) - 100 gm 15. Shredded Coconut (खोपरा) - 25 gm 16. Garlic (लहसुन) - 25 17. Coriander (धनिया) - 20 gm 18. Poppy Seeds / Khas-Khas (खसखस) - 25 gm 19. Green Chilli (हरी मिर्च) - 25 20. Onions (प्याज) - 3 21. Kewda Water (केवड़ा जल) - 1 tbsp [for flavor] ...............................................................................................................
