METHI MURG : A classic Indian recipe with fresh Fenugreek leaves as well as Dried Fenugreek. The fresh variety is also great in flatbreads and stir-fried dishes. Dried fenugreek also known as ‘Kasuri Methi’ is great in curries and lends so much flavour. This is a delight for Chicken Lovers. Chicken and Methi compliment each other really well and makes it a delicious dinner party dish. METHI MURG YOU WILL NEED FOR MARINATION CHICKEN – 800 GRAMS CURD – 3 TABLESPOONS CORIANDER POWDER – 1 TABLESPOON KASHMIRI RED CHILLI POWDER – 1 TABLEPOON TURMERIC POWDER – 1 TABLESPOON WHITE PEPPER POWDER – 2 TABLESPOON ROASTED METHI POWDER – ¼ TSP [ FENUGREEK] SALT – TO TASTE FOR GRAVY GHEE – 2 TABLESPOONS CINNAMON STICKS – 2 NOS CLOVES – 5 NOS GREEN CARDAMOM – 5 NOS BLACK CARDAMOM – 1 NOS BAYLEAF – 1 NO ONIONS – 250 GRAMS GARLIC – 25 GRAMS GINGER – 50 GRAMS TOMATOES – 150 GRAMS GREEN CHILLIES– 5nos [Slit, de-seeded] FOR GARNISH DRIED KASURI METHI [DRIED FENUGREEK LEAVES] METHOD MARINATION Take a bowl and add 3 tbsp of fresh curd , coriander powder, kashmiri red chilli powder, turmeric powder, white pepper powder, roasted methi powder, salt (as required). Mix all the ingredients , add the chicken and mix it nicely. Keep the marinated chicken for 30 minutes at room temperature. METHOD FOR GRAVY Heat the pan on low flame, add ghee and whole grama masala. Keep it for few secondS till it crackles. Then add onions, chopped ginger, chopped garlic , saute it for 10mins on medium to high flame then add tomatoes , green chillies and cook it for 5 mins on medium flame . Cool all the vegetables at room temperature and grind it .Heat the pan on high flame, add the paste and cook it for 5minutes on medium flame . Pour ½ cup of water and cook it for 10 mins on medium to high flame . Add the marinated chicken and cook it for 10 mins on medium flame. After that, cover it for 5mins on low flame. Garnish the dish with Kasuri Methi. NOTE – ROAST THE FRESH METHI AND GRIND TO MAKE IT POWDER, BEFORE USE .
