After deep frying put all the kebabs in a dish, cover half cup of grated cheese all over, bake for 5 min until cheese melts, serve hot. Lucknowi Kabab: Ingredients Oil 2 tbsp Onion chopped 1 cup Ginger garlic paste 1 tsp Green chilies 6 chopped Chili powder 1 tsp All spice 1 tsp Salt 1 tsp Almonds or cashew nuts grinded 1 tbsp Hung curd 2 tbsp Chicken minced ½ kg Chopped coriander ¼ cup Chopped mint leaves ¼ cup Roasted gram flour 1 tbsp Bread crumbs as required Egg to coat Sweet chili sauce to serve METHOD Heat oil, add onion, fry till light golden, add ginger garlic paste, chopped green chilies, chili powder, salt and allspice, add grounded almonds, hung curd, mix well, cook till dry, remove and cool. Then add in it chicken mince with chopped coriander, mint, roasted gram flour, mix all well and chopperize once until well combined, make kebabs, coat with bread crumbs, dip in egg, deep fry, serve with suri sweet chili sauce. Chatpata Chana: Ingredients White chickpeas boiled 250 gm Oil ½ cup Onion chopped 1 cup Chili powder 1 tsp Roasted & crushed cumin 1 tsp Black pepper ½ tsp Coriander powder 1 tsp Salt 1-½ tsp Lemon juice 2 tbsp Tandoori color ¼ tsp Green chilies chopped 4 Water ½ cup Chaat masala 1 tsp Coriander leaves 3-4 tbsp chopped Brown onion 2 tbsp Sev ½ cup Papri crushed ½ cup Potato 1 boiled METHOD Soak chanaovernight and boil next morning. Heat oil, add chopped onion, cook till light golden, add all the seasonings, lemon juice, color, mix andcoat, add chana with water, cover and cook till done.Before serving sprinkle with chopped brown onion, chopped coriander leaves, sev, papri and chat masala.
