If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this YouTube channel @ https://bit.ly/3ac5djo or go to our website: https://www.masala.tv/ ------------------------------------------ KEBAB KULFI FALUDA Ingredients Chicken mince ½ kg Bread slices (soaked in water) 2 Finely chopped green chilies 1 tbsp Ginger garlic paste 1 ½ tsp Salt 1 tsp Black pepper 1 tsp Egg 1 Chopped onion 1 cup Chopped coriander leaves 3 tbsp Allspice 1 tsp Soy sauce 1 tbsp Green chili garlic sauce 1 tbsp Roasted & crushed cumin ½ tsp Ingredients for Rabri: Whipped yogurt ½ kg Salt ½ tsp Black pepper ½ tsp Cream ½ cup Cashew nuts grinded 15 Pistachio 1 tbsp Green chili garlic sauce 1 tbsp Ingredients for Faluda Boiled noodles ½ packet Chopped pistachios 1 tbsp Silver paper as required METHOD Soak bread slices in ¼ cup water. In ½ kg chicken mince, add bread slices, green chilies, coriander leaves, all the spices, mix well, grease your steel kulfi mould very well, add in mince mixture pressing it well, so that it goes inside of the mould, put the chicken skewers in the mould and put it in the freezer overnight, then remove and shallow fry from all the sides. TO MAKE RABRI In your well beaten yogurt, add salt, black pepper, cream and chopped pistachio, beat well. TO SERVE Put kulfi in a platter on the bed of boiled noodles, and drizzle with prepared rabri and tamarind chutney . ------------------------------------------ NAWABI CHICKEN Ingredients Boneless chicken cubes ½ kg Ginger garlic paste 1 tbsp Allspice ½ tsp Salt 1 tsp Black pepper crushed 1 tsp Water 1 cup Sambal Oelek 1 tbsp Ingredients for Masala Oil 2 tbsp Butter 2 tbsp Onion cubes 1 Capsicum cubes 1 Mace ¼ tsp Nutmeg ¼ tsp Cardamom powder ½ tsp Green chilies 10 grounded Cream 200 gm Cheddar cheese 1 cup grated Sweet sauce 2 tbsp Sriracha sauce 1 tbsp METHOD In a bowl, add chicken cubes, ginger garlic paste, allspice, salt, black pepper and mix well, leave it for 30 mins, put marinated chicken in little water in a pan, cook on medium heat until water has dried and chicken tender, remove from heat and keep aside. METHOD for masala : In a bowl, add green chili paste, green cardamom powder, nutmeg, mace, mix well. Heat butter and oil on medium high heat till hot, add onion and cook till soft, add capsicum, cook both for 2 mins, add the chicken pieces, fry for 1 min, add the green chili paste with spices and mix well, once everything is mixed well, add the cream and cheese, mix well till warm, transfer to a serving dish, serve hot.
