If you enjoy cooking Pakistani food and are looking for recipes, videos of LIVE shows, totkas, and other food stories in both Urdu and English, subscribe to this YouTube channel @ https://bit.ly/3ac5djo or go to our website: https://www.masala.tv/ ------------------------------------------ Behari chicken boti karahi Ingredients marination: Boneless chicken big cubes 500 gm Ingredients for marination Papaya paste 2 tbsp Ginger garlic paste 1 tbsp Yogurt ½ cup Lemon juice 2 tbsp Almond powder 1 tbsp Coconut powder 1 tbsp Gram flour 1 tbsp Salt 1 tsp Chili powder 2 tsp Roasted and crushed cumin 1 ½ tsp Oil or clarified butter 3 tbsp Green chili pastes 1 tbsp Ingredients for masala Clarified butter ½ cup Chopped tomatoes 3 Ginger garlic paste 1 ½ tbsp Water ½ cup Butter 3 ounce Method: For marination: All marination ingredients mix well and leave it for 2 hours then put on skewers and grill or bake then give dum of coal For masala: Heat oil and butter add ginger garlic and 3 sliced tomatoes with ½ cup water, green chilies 2-3, cover and cook till tomatoes are tender, add in the leftover masala from the marinated chicken, fry chicken skewers in a fry pan until golden and chicken tender, give dum of coal. Now add the chicken into the prepared masala by removing it from the skewers, add whole green chilies 6-8, serve in a karahi with onion rings and 1 chicken skewer kept over the karahi with chicken. ------------------------------------------ SHAWARMA SANDWICH Ingredients Chicken boneless cut into small cubes ½ kg Thick curd ½ cup Salt 1 tsp Roasted & crushed cumin ½ tsp Turmeric ½ tsp Chili powder 1 tsp Coriander powder 1 tsp Lemon juice 1 tbsp Oil 1 tbsp Ingredients for Sauce Mozzarella cheese or cheddar cheese as required Ketchup ½ cup Chopped garlic 1 tbsp Vinegar 2 tbsp Chili sauce 1 tbsp Soya sauce 1 tbsp Crushed red pepper 1 tbsp Mayonnaise ½ cup Cream cheese ¼ cup Tahini sauce 1 tbsp Black pepper ½ tsp Salt ¼ tsp Garlic paste ½ tsp Vinegar ¼ cup Water 1 cup Carrot julienne ½ cup Cucumber julienne ½ cup Capsicum julienne ½ cup Onion sliced 1 cup Hotdog buns 6 METHOD FOR CHICKEN In a bowl marinate chicken cubes with yogurt, salt, cumin, turmeric, chili powder, coriander powder, lemon juice and oil, pan fry chicken for 15 mins. METHOD FOR CHILI SAUCE Heat oil in a pan, add chopped garlic, sauté for a min, add ketchup, vinegar, chili sauce, soya sauce, salt, crushed red pepper, cook for 5 mins on low flame till sauce thickens, remove and keep aside. In another bowl mix mayonnaise, cream cheese, black pepper, salt, garlic paste, mix well, mayo sauce is ready, keep aside. TO ASSEMBLE THE SANDWICHES Heat hotdog buns, spread with butter and cream cheese, spread chili sauce and mayo sauce on it, put veggies on top, cover with cheese, cover with some more cheese, sprinkle with chili flakes and oregano, put your sandwich in a pre-heated oven, grill for 5 mins till cheese melts, serve hot with fries.
