This Quick keto diet Southwest Chicken Breast Dinner is packed with flavor and is perfect for a busy weeknight meal!
I always try to keep some fresh riced Cauli on hand to make this meal come together even faster! I usually process a couple of heads at the start of the week and pop a few servings in the freezer for easy access! What’s your fav way to enjoy Cauli Rice?
Season thinly sliced chicken breast and Sear. For the Base layer: 1 ½c fresh Riced Cauliflower, Cilantro, Splash of Lime Juice, 1 tsp Olive Oil, Tajin to taste. Saute for 5 min and add to Cast Iron pan. Top with Chicken Breast.
For the Sauce: 2 tbsp Sour Cream, 1 tbsp mayo, 1 tsp Chopped Jalapeno, 1 tsp Cilantro, ½ tsp Garlic Powder, ½ tsp Garlic Chili Sauce, Splash of Lime Juice. Add shredded cheese and Bake at 350⁰ for 10 min.
