Today I’ll show you how to make a delicious & money saving recipe using leftover shredded chicken. I’ll show you how to make your own healthy green sauce & chicken enchiladas. This meal is not only quick to put together but you can make it on any weeknight & have a healthy dinner on the table for you & your family in no time. It is possible to cook healthy meals on a budget. We love leftover veggies so I always make this quantity. Ingredients for Green Sauce: - 12 Tomatillos - 7 cloves of garlic peeled - 6 cloves of garlic finely chopped - 1 large white onion - 3 Jalapeno peppers - 1 bunch of cilantro - Olive oil (or extra virgin olive oil) - Salt - Pepper Rest of Ingredients: - Leftover chicken - Sour cream - Green salsa (if you haven’t made your own) - Flour tortillas - Grated cheese (I use a fiesta or Mexican blend) - Directions for Green Salsa: - Preheat your oven to 425 degrees - Peel all the tomatillos, rinse them so the skin is not sticky & cut each one into 4 pieces - Place all the tomatillos into a large bowl - Add the peeled garlic into the large bowl - Cut the jalapeno peppers in half and remove the seeds & ribs (to make the recipe less spicy) - Add the jalapeno peppers into the bowl - Drizzle the oil on top - Add a large pinch of salt & pepper into the bowl - Pour all of the ingredients into a cookie sheet & place it in the oven for 25 minutes - Add all the ingredients to a food processor (or blender) and pulse it until it comes out with a salsa consistency - Add a large handful of cilantro to the food processor - Add a drizzle of the oil - Pulse all the ingredients until the cilantro is now all chopped up Directions for rest of recipe: - With two forks shred the leftover chicken into smaller pieces - Add sour cream to chicken to moisten the chicken but not have it too wet – I used ¾ a cup - Mix the sour cream and chicken mixture together - Add a handful of the grated cheese so it’s mixed in without overpowering the mixture - Add some of the green salsa to the bottom of a casserole dish – if you’re using a bottled salsa, make sure to pregrease the pan before adding the salsa - Take a tortilla and add the chicken mixture to it and top it with a small drizzle of green salsa - Fold the tortilla and place it in the casserole dish fold side down - Repeat until your dish is full - Now drizzle more of your green salsa on top and with the back of a spoon spread it on top of the tortillas - Add a few dollops of sour cream on top of some of the tortillas - Top the tortillas with more shredded cheese - Place casserole dish in the oven for 20 to 25 minutes until the cheese is melted & golden - Enjoy!
