Stuffed chicken with mozzarella asparagus and sun dried tomatoes and a side of riced cauliflower. This is a easy and delicious lunch to have ready for the week. Fly chicken open and stuff with mozzarella, asparagus and sun dried tomatoes. Secure chicken closed with toothpicks. Add to a pyrex backing dish and coat with olive oil to add a great flavor. Cook at 350 for about 30 minutes. Portion in to meal prep containers and enjoy :) This weeks meal prep is sooooooo easy! Definitely no excuses not to prep and eat healthy for the week when you can put everything together in less than 30 minutes. I hope this helps give you some meal prep motivation! Xoxo!
