Author, presenter and Strictly Come Dancing finalist John Whaite makes a simple curried chicken, rice & lentil one-pot – a great midweek meal with minimal washing up – always a winner!
This recipe uses everyday value chicken thighs and chicken stock that add loads of flavour to the rice and lentils. Play around with different spices or heat levels based on what you have in the cupboard or what you feel like – you can use mild or medium curry powder, or add paprika instead to make this one-pot dish one of your new favourite recipes.

2 tbsp Essential Sunflower Oil
1kg pack Essential Chicken Thighs
120g Essential Basmati Rice
120g red split lentils
1 Essential Onion, thinly sliced
3 cloves garlic, crushed or finely grated
4cm piece ginger, peeled and finely grated
1½ tbsp hot curry powder
1 tbsp Essential Tomato Purée
1L chicken stock, made from a pot or cube is fine
