1 Medium Onion – coarsely chopped
1/2 Bunch Scallions – chopped
2 Scotch Bonnet Peppers
4 – 5 Cloves Garlic –
1 Tbsp Chinese 5 Spice Powder
1 tsp Allspice
2 tsp Pepper
1 tsp Dried Thyme
1 tsp Nutmeg
1 tsp Salt
1 Tbsp Oil
1 Lime – juiced
1/2 C Light Soy Sauce
Place onions, scallions, scotch bonnet & garlic in a food processor. Once chopped add in soy sauce & oil. Place
spices in mixture and stir well. Pour mixture over chicken & refrigerate overnight if possible.
Bring chicken to room temperature before grilling.
Grill moving around frequently for 35 – 40 minutes or unitl chicken is cooked through.
