If the chicken breast is too large, slice it to make two thin slices. Place the chicken breast between two sheets of plastic/cling wrap. Use a meat hammer or a heavy pan to pound the chicken breast until it is even in thickness (around ½-inch thick). 2. Keep breadcrumbs, maida, and egg beaten with water in separate plates/flat bowls. 3. Salt the chicken with salt and pepper. Dredge the chicken breast in maida, and shake off the excess flour. Add it to the beaten eggs and then into the panko breadcrumbs and coat completely. 4. Add it into a pan of hot oil and fry until golden brown and crisp, turning it halfway through. The frying should take around 4-5 minutes. 5. For the sauce, combine all the ingredients together in a bowl. 6. Serve with rice or with a shredded cabbage salad. Cooking Tips: 1. Katsu is commonly made with flattened pork. Tonkatsu literally means pork cutlets in Japanese. 2. Panko breadcrumbs give this dish its unique crust. If you do not have Panko, coarsely blend some fresh bread. Toast it in a pan on very low heat, stirring regularly, until it turns crisp, but not dark. Use this for the coating.
