Joy’s show is called “I Hate Cooking” so she focuses on making recipes that are not only delicious but also healthy and easy to cook.
Joy starts with canned chicken, which she empties into a large bowl. To this she adds store-bought chopped vegetables including a cup of chopped celery and tri-colored chopped peppers for color and crunch. She notes that you can also use just green peppers. Next, she adds chopped cashews, some crispy fried onions, about 1/4 cup of pimentos, 1/4 teaspoon of basil, and mayonnaise. Joy advises not to sweat the measurements, you can just eye ball it. She tops it off with more fried onions.
She spoons the chicken mixture into a pan, which has been sprayed with cooking spray, and bakes it for 30 minutes at 350 degrees. The result is a crispy chicken salad that's delicious and easy to make.
