Hunza Zardig Chicken
Serves 4-5
Recipe in English:
Ingredients:
-Chicken boneless cubes ½ kg
-Dhania (Coriander seeds) roasted & crushed 1 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Namak (Salt) 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Pyaz (Onion) small cubes 1 Cup
-Aloo (Potato) cubes 1 Cup
-Tamatar (Tomato) small cubes 1 Cup
-Hara dhania (Fresh coriander) chopped 2 tbs
-Hari mirch (Green chillies) 7-8
-Lemon juice 2 tbs
-Tez paat (Bay leaves) 2
-Darchini (Cinnamon stick) 1
-Badi elaichi (Black cardamom) 1
-Hari elaichi (Green cardamom) 3
-Laung (Cloves) 3
-Sabut kali mirch (Black peppercorns) 8-10
-Dried red chillies 3
-Garam masala powder 1 tsp
-Pani (Water) ½ Cup or as required
-Apricot oil ½ Cup
Directions:
-In bowl,add chicken,coriander seeds,red chilli powder,turmeric powder,salt,cumin seeds,ginger garlic paste,mix well and marinate for 30 minutes.
-Add onion,potato,tomato,fresh coriander,green chillies,lemon juice,bay leaves,cinnamon stick,black cardamom,green cardamom,cloves,black peppercorns,dried red chillies,garam masala powder and mix well.
-In clay pot,add marinated chicken,water,apricot oil and mix well.
-Cover & seal with aluminum foil and cook on burning charcoal for 25-30 minutes.

-Bowl mein chicken,dhania,lal mirch powder,haldee powder,namak,zeera aur adrak lehsan paste dal ker ache tarhan mix karein aur 30 minutes kliya marinate ker lein.
-Pyaz,aloo,tamatar,hara dhania,hari mirch,lemon juice,tez paat,darchini,badi elaichi,hari elaichi,laung, sabut kali mirch,laung,sabut kali mirch,dried red chillies aur garam masala powder dal ker ache tarhan mix karein.
-Clay pot mein marinated chicken,pani aur apricot oil dal ker ache tarhan mix ker lein.
-Aluminum oil sa cover ker ka seal ker lein aur jaltay hoye koyla mein 25-30 minutes kliya paka lein.
