Asian Cucumber Salad
Ingredients
• 3 Cups cucumber sliced
• 1/4 cup of red onion sliced
• 1/2 cup red bell pepper chopped
• 1 tablespoon rice vinegar
• 1 tablespoon toasted sesame oil
• 1 teaspoons honey
• 2 tablespoons chopped or sliced green onion
• 1 tablespoon sesame seeds
• salt and pepper to taste

Preparation
Place all ingredients in a large bowl. In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, honey, cilantro and sesame seeds. Taste and add salt and pepper if desired.Serve immediately or store in the refrigerator for up to 8 hours.

Creamy Corn Salad
Ingredients
• 1(15 ounce) kernel corn, drained
• 1 medium tomato, seeded and diced
• 2 small green onions, chopped
• 1⁄3 cup mayonnaise
• 1⁄2 teaspoon dried basil (optional)

Preparation

• 1/2 cup pistachios, roughly chopped
• 1/3 cup olive oil
• 1/4 teaspoon salt
