Healthy and tasty carrot payasam made with coconut milk. This healthy dessert recipe is a welcome change to the regular desserts one may make. This recipe is one of the easiest ways and payasam / kheer can be made in under 30 minutes. With the combination of carrot, coconut milk and pistachios, this golden coloured payasam / kheer is deliciousness at its peak. Serves : 3 to 4 Shelf-life : 1 day (Store in refrigerator and consume same day) INGREDIENTS: 1. Ghee - 1 tbsp 2. Carrot, grated - 1 cup (Carrot can also be boiled and mashed) 3. Boiled or pasteurised milk - 2 cups 4. Sugar - 1/2 cup or Jaggery - 1/4 cup 5. Coconut milk - 1/2 cup 6. Cardamom powder - 1/4 tsp 7.
