In this video, learn how to make handi chicken easily at home. Handi chicken is made in a special vessel called Handi. But in this video, we will make it in a simple Kadhai (Wok).
Ingredients to make Handi chicken
• 1 tbsp coriander seeds
• 1 tsp cumin
• 1-inch ginger
• 10 garlic cloves
• 2 onions, sliced
• 500 gm Chicken
• Salt to taste
• 1/4 tsp Turmeric powder
• 1 tsp Kashmiri red chili powder
• 2 Tomatoes, chopped
• 1/2 cup curd/yogurt
• 2 tbsp Coriander leaves
• 1 tsp Kasuri Methi (roasted & crushed)
• 1 tsp Garam Masala powder
• 2 green chilies (optional)
• 2 tsp Cream
Step by step instructions
1. Dry roast coriander seeds & cumin on low heat until aromatic. Let it cool down. Crush it to a coarse powder. Set it aside.
2. Crush ginger and garlic in a mortar & pestle. Set it aside.
3. Heat 2 tsp oil over medium heat.
4. Saute onions until translucent.
5. Add the crushed ginger & garlic. Saute until onion turns golden.
6. Add chicken to it & combine everything well.
7. Cook until the color of chicken turns from pink to white. It may take around 5 minutes on medium heat.
8. Add salt, turmeric powder, Kashmiri red chili powder, crushed cumin and coriander seeds to it. Saute until masala starts to leave oil from the sides.
9. Add tomatoes & cook until it becomes soft & pulpy.
10. Add 1/4 cup water & ½ cup curd to it. Cook until the gravy comes to a boil.
11. Cover & cook for 10 minutes or until the chicken is cooked.
12. Finally add coriander leaves, Kasuri Methi (roasted & crushed), garam masala powder, green chilies (optional) & cream. Cover & cook for 2 minutes.
13. Delicious Handi chicken is ready. Serve hot with Roti or Naan.
