Beef biriyani Ingredients:
গরুর মাংস - ১ কেজি
পিঁয়াজের কুঁচি – ১ কাপ
আদা বাটা – ১/৪ কাপ
রসুন বাটা – ১/৪ কাপ
বাদাম বাটা - ১/৪ কাপ ( চিনা বাদাম অর্ধেক আর কাঠ বাদাম ও পেস্তা বাদাম সমপরিমান বাকি অর্ধেক নিয়ে বেটে নেওয়া)।
মরিচের গুঁড়া - দেড় চা চামুচ
জিরা গুড়া - ১ চা চামুচ
জায়ফল জয়ত্রি গুড়া / বাটা – ১ চা চামুচ
গরম মশলার গুঁড়া - ১ চা চামুচ
এলাচির গুড়া – ১ চা চামুচ
কাঁচা মরিচ – ১২-১৫ টি
কেওড়া জল – ১ চা চামুচ
গোলাপ জল - ১ চা চামুচ
লবন – স্বাদ মতো
তেল – ১/৩ কাপ
পোলাওর জন্যঃ
চিনিগুড়া চাল – ১ কেজি
আলু বোখারা – ৭-৮ টি
পিঁয়াজের বেরেস্তা – ১ টেবিল চামুচ
এলাচি – ৩ টি
দারুচিনি – ৩ টুকরা
লবঙ্গ - ৬-৭ টি
তেজপাতা – ৩/৪ টি
কেওরা জল – ১ চা চামুচ
ঘি – ২ টেবিল চামুচ
গুঁড়া দুধ – ১/২ কাপ
পানি – চাউলের পরিমাণ অনুযায়ী ডাবলের চেয়ে ১ কাপ কম।
কাঁচা মরিচ – ১০-১২ টি
লবন – স্বাদ মতো
তেল – মাংস রান্নার থেকে তেল উঠিয়ে নিয়ে দিতে হবে।
