A touch of health and a blast of flavours, that’s what this Egg Salad is all about.

Ingredients:
Onion
Green chilli
Cherry tomato
Chicken sausage
Lettuce
Boiled eggs
Olive oil
Mustard sauce
Lemon juice
Salt
Black pepper
Red chilli flakes
Cheese

Method:
Chop the onion, green chillies, cherry tomatoes, sausages, lettuce and quarter the boiled eggs.
Mix together olive oil, mustard sauce, lemon juice, salt, black pepper and red chilli flakes in a separate bowl. This is the dressing for the salad.
Place all the chopped ingredients in a large bowl, and grate some cheese on top.
Toss everything together to mix well, and place in a salad bowl. Top with the quartered boiled eggs.
Finally, sprinkle generous amounts if the spicy and tangy salad dressing and serve immediately.
