Ingredients- 500 gms chow mein green chilly 1 big onion finely chopped 1 inch ginger finely chopped 3 garlic finely chopped 400 gms chicken (boneless) 2 eggs 200 gms fresh beans 200 gms carrot 1 capsicum cut length wise spring onion white portion spring onion green portion 1 big spoon dark soya sauce 2 big spoon tomato ketchup For garnishing spring onion green cucumber lemon Preparation- - For 500 gm noodles, heat 7 litres of water with 4 spoon of salt in a big pan on high heat till it comes to a roll boil. - Add the noodles and stir it lightly for it to open up. - Boil it for 5 mins, till it becomes soft. - Drain it in a strainer and wash it with cold water to stop from over cooking. - Set it aside. Process- - Heat 1.5 tbsp oil in a wok. - Add the sliced green chilly, onion, ginger and garlic then give it a stir. After it gets fried add salt and turmeric to it. - Now add the chicken strips and fry on medium heat for 10 mins or till cooked & evenly browned. - Fry two eggs. Keep it aside. - Heat 2 tbsp of oil and fry beans and carrot with covered lid and little bit of salt. - After they are done add capsicum and the white portion of spring onion give a stir. Cook till they are done.It will take 2-3 mins. - Add the green portion of the spring onion and stir it for 2 mins and then add egg and chicken. Fry it for 2 mins. - Now add the boiled chow min and toss it with the chicken, egg and veggies and fry for 2-3 mins. - Add soya sauce and tomato ketchup mix it well. - Lastly garnish with spring onion greens, cucumber and lemon.
