PUMPKIN PIE CHEESECAKES
-- CRUST --
1.5 cups raw pecans
1 cup medjool dates (soaked in warm water for 20 minutes)
pinch of sea salt
-- PUMPKIN PIE FILLING --
1 cup cashews (soaked in hot water for 2 hours)
1/2 cup light coconut milk
1/2 cup pumpkin purée
1/2 cup maple syrup
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
½-1 tsp of cinnamon and nutmeg
¼-½ tsp of ginger and mixed spice
(NOTE: I like them heavy on spice so you can reduce the amounts shown in the video if you like!)
ALMOND BUTTER CHOC CHIP SLICES
½ cup dates (soaked for 20 minutes)
¾ cup almond butter
¼ cup applesauce
¼ cup almond milk
½ cup oat flour
1½ teaspoons baking soda
1½ teaspoons vanilla extract
¼ teaspoon salt
TONS of chocolate chips
(Bake at 350F/175c for 25 mins)
LEMON SHORTBREAD BARS
-- CRUST --
1 cup flour
⅓ cup coconut oil, melted
½ cup powdered sugar
-- LEMON FILLING --
1 ripe banana
Zest and juice of 3 large lemons
¾ cup granulated sugar
1 teaspoon vanilla extract
2 tablespoons cornstarch
2 tablespoons flour
Powdered sugar, for dusting
