This is a super easy and tasty penne pasta recipe tossed in a coconut milk + cheese sauce
Made this with my lodge cast iron skillet.
Marinade - 1 small jalapeño, 1/2 a thumb of ginger, 1 small onion, 4 cloves of garlic, green onions ( a handful), 1/2 cup vegetable oil, 1tsp curry powder, 1tsp thyme, 1tsp Knorr powder, 1/2 tsp lemon pepper seasoning, 1/2 tsp salt, 1tsp chilli pepper (optional)
I used chicken breast cut into strips (1 large), chicken thighs are great too
1 small onion (sliced) Green, red, yellow bell peppers, a handful of chopped green onions (for frying and for garnishing), 2 small cloves of garlic, 1 cup coconut milk, 3/4 cup cheese ( cheddar, Monterey jack, queso quesadilla), 1/2 tsp thyme, 1/2 tsp curry powder, 1tsp Knorr powder, 1/2 tsp salt, coconut oil
2 cups penne pasta( i used about half of the 1 LB box)
