Homemade Bacon Guacamole Chicken Recipe
Ingredients:
1 ripe avocados
1/4 white onion, finely chopped
1/4 tomato, chopped
1 tablespoons cilantro, chopped
1/4 tablespoon salt
1 tablespoons freshly squeezed lime juice
2 boneless skinless chicken breasts
salt
Freshly ground black pepper
8 bacon strips
1 tablespoon oliu oil
Instructions
1. Preheat the oven to 400 ° F.
2. Using a knife, cut around the butter pit and remove the two halves from each other. Remove the hole and use the spoon to scoop out the butter. In a large bowl, combine butter, onions, tomatoes, cilantro, salt and lemon juice. Grind and stir with fork until there are no large chunks of butter.
3. Marinate the chicken with salt and pepper on all sides. Chicken breast cut in half horizontally. Cut a slot into the center of each half to make a bag. Take a spoonful of guacamole and pack it into a bag. Pinch the edge of the chicken.
4. Wrap the chicken with two strips of bacon, making sure all the ends of the bacon are on the same side of the chicken.
5. Heat oil in pan on high heat. Sear chicken wrapped bacon for two to three minutes on each side. Remember to cook chicken ribs. Bake for 10 minutes
