CUCUMBER, TOMATO, ONION & CARROT SALAD


--------------------------------------------------------- INGREDIENTS for the Berta Jay's Cucumber, Tomato, Onion and Carrots SALAD --------------------------------------------------------- 1 2/3 - 2 cups chopped cucumbers The amount will depend on the size cucumber you use. I used one 7-inch regular cucumber and ½ of a long English (cucumber). I scraped out the seeds. 2 cups chopped tomatoes I used 2, 3 inch long plum + 20 cherry tomatoes (I used Cherubs) ½ cup chopped onion I used a medium Vidalia ½ cup shredded carrots Mix these ingredients well and SET ASIDE. THE SAUCE Put these ingredients into a blender: 1/3 cup apple cider vinegar (ACV) I used Braggs. 2 tablespoons water 2½ tablespoons sweetener I used 1½ tablespoon maple syrup + 1 tablespoon xylitol. 3/4 teaspoons parsley flakes ½ teaspoon dried dill ½ teaspoon salt I used pink Himalayan. 1/8 teaspoon ground black pepper (18 turns the average pepper mill) 1/8 teaspoon xanthan gum BLENDERIZE and pour over the SET ASIDE vegetables; Mix well! Refrigerate until ready to eat. ENJOY IT! --------------------------------------------------------- My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else. For over 30 years I have used every diet imaginable to lose weight, but I confess that I am now at home using the vegan lifestyle. I want to share what I have learned about eating and enjoying food. And, since I am still learning how to be more consistent with this lifestyle, I have decided to eat more healthily, realizing the weight will come off eventually. Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course. I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.
