Coconut Sugar Recipe: Thai Coconut Lime Chicken

THAI COCONUT LIME CHICKEN
1 whole chicken breast, fillet
For marinade:
2 tsp sesame oil, and extra for cooking
1 tsp ginger powder
1 tsp fish sauce
3 tbsp Coco Sugar®
150 ml coconut milk
Lime juice
For Salad Dressing:
1 tbsp Coco Sugar®, dissolve
Lime Juice
1 tsp sesame oil
1 tsp chili flakes
Salt
Veggies:
Celery, chopped
Romaine lettuce
Carrot, cut in matchstick style
Pineapple, diced
STEP:
1. Marinate the whole chicken breast in all the marinade ingredients. Rest for about 2 hours.
2. Combine all the salad dressing ingredients in a bowl. Meanwhile, mix all the veggies in another bowl, then pour the dressing into it. Mix them all.
3. Bring a pan to high heat, then cook the chicken. Each side will take about 5 minutes or more, depends on its thickness.
4. Serve the chicken with the salad on its side.
