Don't soak it for too long, or it will become soggy. • White bread works best. Avoid whole wheat bread or cake. • Fresh grated coconut gives the best taste, but desiccated coconut is a good substitute. • Adjust the sugar according to the sweetness of your mangoes. • Chill the dessert for at least 3–4 hours (or 1½–2 hours in the freezer) before serving. • Serve well chilled for the creamiest texture and the best flavour.
