This cobb salad is a hodge podge of recipes that I have found. I have combined my favorite recipes for an amazing variation!
Feel free to make swaps or add in your favorite foods! I love to add in cherry tomatoes too, but I was out of them when I filmed this. You can get creative and substitute in your favorite kind of cheese or dairy-free alternative! I am a feta addict so that was the clear choice for me.
I made the chicken & eggs in my instant pot to speed up the cooking process but feel free to cook those on your stovetop if you don't have an instant pot :)
You can really customize this to your liking but I was able to make 3 servings using the following measurements as a rough estimate:

For the rest of the salad:
- 3 heads x Romaine (washed, dried, chopped into strips)
- 1/2 can x sweet corn (washed & dried)
- 1 cup x Cherry Tomatoes (I didn't have any on hand but love to add them in. Customize quantity to your liking. Wash & quarter them)
- 3 oz x Feta in brine (Remove feta from brine & crumble. About 6tbs)
- 1 - 1.5 Avocado (diced)
- 1 batch of honey dijon dressing
- 2-3 x chicken breasts (depending on how large. in total about 1.3lbs)
- 4 x hard boiled eggs (peeled, rinsed, dried, chopped)
- 6-8 strips of cooked bacon (patted dry & diced)
Combine all ingredients in a bowl & enjoy! If you're meal prepping this I suggest storing the ingredients as follows:
- Romaine chopped in a container with a paper towel on top to absorb moisture
- Chicken & bacon in a container together (you can heat them up together if you like them warm on your salad)
- Dressing separately. Dress when you're about to eat
- Don't cut into avocado until you're ready to eat
- Keep corn in a container in the fridge once you've prepped it
- Keep feta in brine until you're ready to use it or alternatively you can keep it in a block. Crumble once you're ready to eat it. This helps keep it moist
- Peel & rinse eggs. Chop once you're ready to eat them
- Pre-cut tomatoes
