Ingredients of Chicken Pulao Recipe:
- 1 cup rice
- 400 gm chicken
- 2 tbs oil
- 3 tbs ghee
- 2 bay leaf
- 1/2 tsp shah jeera (or Caraway seeds)
- 1 cinnamon stick
- 4 cloves
- 2 green cardamom
- 1 cup meant leaves
- 1/2 tsp garam masala
- 1/4 cup brown onion
- 1/4 cup fried cashewnuts
For chicken marination-
- salt
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1/2 cup curd (or dahi)
- 1 tbs ginger-garlic paste.
Method of Chicken Pulao Recipe-
- Soak the rice for 30 mins.
- Marinate the chicken with salt, turmeric powder, red chilli powder, curd & ginger-garlic paste.
Mix everything well. Cover & rest for 30 mins.
- Heat oil in a pan & add ghee. Add bay leaf, shah jeera, cinnamon stick, cloves & green cardamom. Fry the spices for 30 sec.
- Add onion & fry till light brown. Add marinated chicken & cook for 5 mins on high flame. Add little water & cook for 6-7 mins with covering the lid on medium flame.
- Add meant leaves & garam masala. Mix well.
- Add soaked rice (*strain the rice competely before adding) and fry for 2-3 mins on high flame. Add 2 glass water for 1 glass rice. Add salt & mix well. Let it comes to a boil & cook for 10 mins on low flame with the lid on.
- Add brown onion, meant leaves & fried cashewnuts. Mix gently & cook again for 5 mins on low flame with the lid on. Switch off the flame after 5 mins & rest for 15 mins.
- Your Chicken Pulao is ready to serve.
