Crockpot Chicken Veggie Rice!

Crockpot Chicken Veggie Rice
INGREDIENTS
Oil Spray
1 Rice (I used Long Grain Basmati Rice)
1.5-2lbs Chicken thighs
1.5 Cups Frozen mixed veggies
3 Cups chicken stock (Check the instruction on your rice, mine needs 1.5 cups for every cup of rice but some other kinds need extra liquid)
2 Cups basmati rice
2 Tbls Poultry seasoning
2 tsp Smoked paprika
Salt/pepper to taste
4 Tbls Oil (Avocdo, olive or ghee would work)
(Optional toping) Plain Greek yogurt or sour cream
