This Chicken sandwich is a homemade recipe that makes a delicious crispy fried chicken sandwich. I used chicken thighs for this flavorful spicy chicken sandwich. You can also use chicken breasts to make this delicious chicken sandwich if you like. I wouldn't really call this a Popeyes copycat recipe or a Chick fil A copy cat recipe but if you like those sandwiches I think you'll love this! I guess you could call this a crispy chicken burger if you wanted to.
Here's my SEASONED SALT recipe https://sweetsavant.com/2018/06/03/seasoned-salt/
Season the chicken thighs well with my seasoned salt recipe or your favorite chicken seasoning and let it sit in the refrigerator overnight.
Put 4 cups of all purpose flour and 2 tablespoons of season salt into a ziploc bag and shake it to blend..
Make a batter in another bowl with 2 beaten eggs one cup of milk 1/2 a cup of hot sauce.
Shake the chicken thighs in the seasoned flour then coat the chicken thighs in the batter. Put the chicken back into the flour and shake it around again to build-up the well seasoned coating.
Fried the chicken in batches in hot vegetable were canola oil for 6 to 7 minutes per side. Drain the chicken on paper towels and then build your sandwich.
To make the coleslaw I used a bag of pre shredded coleslaw mix. There are about 4 cups of shredded cabbage and carrots in the package.
Mix in half a cup of mayonnaise, half a cup of sweet pickle relish, 2 tablespoons of grated onion, and a quarter cup of Apple cider vinegar.
You can add 2 tablespoons of sugar if you like a sweeter slaw.
