Chicken Kabsa Ingredients 450gm half chicken 200gm golden sella basmati rice 1TB oil 1 medium sliced onion 1TB ginger garlic paste 1 medium chopped tomato 1TB kabsa spice (see notes) 1 loomi (dried lemon) Salt 700ml water Notes ? I used kabsa spice mix that we get at our local supermarket. If you don’t have/get make it as below by lightly dry roasting and grinding to a fine powder 1/2tsp cumin seeds 1TB coriander seeds 2-3 black pepper corn 3 cloves 2 green cardamom 1/4 inch cinnamon stick 1/2 star anise - I had soaked sella rice for 2hrs. - From 700ml water to boil chicken, I had roughly 500ml broth. I used my estimation by sight. If you aren’t sure, you may measure stock as per the rice you are using - I cooked rice for 15min high or until almost all water was absorbed. Then add fried carrot and dry fruits (see end notes) and cooked on Dum for 10 odd mins - Chicken was broiled at 160C preheated for 22min. By this time I had a nice brown texture I fried 1 large grated carrots, raisins and some cashews in ghee that was added to rice
