Fajita Chicken Casserole Keto Recipe
2 chicken breasts halved
1 tsp oil
2 bell peppers cut into strips
1 medium onion
1/2 tsp cumin powder
1 tsp dried oregano
1/8-1/4 tsp chili powder
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1/4tsp salt
1/2 tsp black pepper
1/2-1 tsp chicken bouillon
2 tsp paprika
1 cup taco blend cheese or preferred
parsley garnish dried or fresh

Preheat your oven to 400F
Using a small bowl add oregano, Italian, paprika, cumin, onion powder, garlic powder, chili powder, roasted garlic and herb, salt, black pepper, and chicken bouillon, and combine.
Slice the onions, and cut the bell peppers into strips.
Season the chicken breast, and use reserved seasoning to season the veggies.
Top the chicken with the seasoned veggies.
Add the cheese, taco, or fajita seasoning and sprinkle parsley on top.
Place into the oven and bake for about 20-30 minutes until the chicken reaches an internal temp of 165F.
Note: If the chicken breast is thick and requires a longer baking time, add the cheese towards the end of the baking process.
