Making adobo is a subject that raise countless of opinions regarding how to actually cook it. There are absolutely many ways to do it, maybe as many as our islands, but no way is neither the correct nor wrong method to cook this dish. This proves how our culture has evolved and how it became our unofficial national dish. Families have passed on their own secret recipes but we can all agree, no matter how we cook it, adobo will always bring us gladness. Chicken adobo is one of the first dishes we cooked when we started living in England and making something that reminds us of home brought us such comfort. • 1 kg chicken thighs
• 1/3 cup soy sauce
• 1/4 cup cane vinegar (we used the Datu Puti brand)
• 1 tsp black pepper
• 1 whole garlic
• 1 whole onion
• 1 cup water
• a pinch of salt
• 3 bay leaves
• 2 tbsp brown sugar
