It is a classic Indian recipe, from the cuisine of Chettinad. It consists of chicken marinated in yogurt, turmeric and a paste of red chillies, coconut, coriander seeds, cumin seeds, fennel seeds, black pepper, cashew nuts, onions, garlic and gingelly oil. It is served hot and garnished with coriander leaves, accompanied with boiled rice or paratha.
Ingredients:
Chicken - 1 kg
Oil - 8 tbsp
Coriander seeds - 1 tbsp
Red chillies - 5
Cumin seeds - 1 tsp
Fennel seeds - 1 tbsp
Cashews - 6
Cinnamon - 1 inch
Cardamom - 3
Clove - 5
Peppercorns - 8
Ginger - 1 inch
Garlic - 6 cloves
Coconut - 1.5 cups grated
Onion - 3
Red chilli powder - 1 tsp
Turmeric powder - 1/2 tsp
Curry leaves - 5 sprigs
Tomato - 3
Salt to taste
Water as needed
Coriander leaves for garnish
