CHICKEN MADE WITH FRESHLY GROUND MASALA - http://maryzkitchen.com/chicken-made-freshly-ground-masala/ INGREDIENTS Chicken with bones – ½ kg Onion finely chopped – 1 Curry leaves -few Tomato finely chopped– 1 Ginger garlic paste – 1 tbsp Oil – 1 tbsp Peppercorns – ½ tsp Whole red chilli – 4 or 5 or as per taste Coriander seeds – 1 ½ tbsp Jeera – 1 tsp Raw rice – 1 tbsp khus khus - 1 tsp [ optional ] Garam masala pwdr – ½ tsp Turmeric pwdr – ¼ tsp Finely chopped coriander leaves to garnish Salt to taste PREPARATION Clean ,cut ,wash and rinse the chicken pieces .soaking water for 10 mins to get rid of excess blood.rinse ,Drain ,marinate with little turmeric + salt and keep aside. Dry roast red chilli + coriander seeds + fennels seeds + jeera + raw rice + peppercorns + khus khus one by one .Cool it and grind it into fine pwdr .[ you can use oil also to roast the masalas ] chicken gravy METHOD Heat oil in apan ,add onion + curry leaves and fry till light brown . Add ginger garlic paste and fry till raw smell leaves. Add tomatoes and fry till oil separates . Add the chicken and stir fry for a minute . Cover and cook for 5 minutes – the chicken will sweat and cook in its own juice . Open and add the grounded masala pwdr + turmeric + garam masala pwwdr + salt . Mix well and fry for a minute so that all the masalas blend well with the chicken . Now add required water- 1 or 1½ cup . [as per the consistency you want ] Cook on medium flame for 15 minutes or till the chicken is cooked well .[cooking time depends on the size of the chicken pieces ] Once done garnish with coriander leaves and off the flame . NOTES This is the recipe we follow in our natives .[Tamil Nadu ] We don’t add garam masala pwdr . Good recipe to cook gavti chicken. You can add little chilli pwdr also if required . Here we are using raw rice as a thickening agent ,if you want you can replace it with 2 tbsp of coconut .
