Super simple and delicious beetroot salad. This is an old recipe, or rather my presentation of an old Holiday appetizer, we used to make in Armenia. I remember seeing this beetroot salad on every table in each house we visit on New Year's day or after, and everywhere it tasted different yet delicious.
Some would even add some cooked shredded chicken breast, a great variation for meat lovers. I preferred mine with lots of pomegranate seeds and quite spicy. The vegan version of this salad is slightly different and very delicious as well. Instead of sour cream and mayo, you'd sauté onions with olive oil, add a tablespoon of tomato paste or even red paste will work, the rest of ingredients will remain the same.
