Beef Yaki Udon
Serves: 2
This blew me away, it was so good. It's easy and delicious! The longest part is waiting for the beef to marinate, minimum 30 minutes but the longer the better!
Ingredients:
240g sliced beef
2 tbsp soy sauce
1 tbsp oyster sauce
1/2 tbsp mirin
salt, pepper - to taste
2 tbsp water or chicken broth
oil
Udon:
2 servings (400g) udon
1 tbsp soy sauce
splash dark soy sauce
msg, salt, pepper - to taste
2 cloves garlic
1 small onion
stir fry veg of choice - I did a carrot
2 green onions
To Serve:
sesame seeds
green onions
nori seaweed
Method:
1. In a bowl, combine beef, 2 tbsp soy sauce, oyster sauce, mirin, water, salt, and pepper. Cover and marinate in fridge for minimum 30min-2h.
2. Cut green onions into 1-inch pieces, keeping greens and whites separate. Mince garlic, thinly slice onion, and julienne veggies.
3. Cook udon according to package. Rinse under cold water.
4. In a large pan over medium, sauté garlic and green onion whites until fragrant.
5. Add in beef, onions, and veggies of choice until cooked.
6. Add in udon noodles, green onion greens, and 1 tbsp soy sauce. Season to taste. Cook until combined and everything is tender.
7. Serve, optionally topped with more green onions and sesame seeds or nori.
