Servings: 5 Serving Size: 125g rice, 300g beef stew Macros per Serving: 625 cal, 42g P, 54g C, 27g F Price per Serving: $5.50 Estimated Cook Time: 45 min Ingredients: -2 pounds beef chuck or stew meat, cut to 1” cubes -1/2 pound baby potatoes, quartered -2 cups beef bone broth -650g cooked white rice -3 bell peppers, cut to large chunks -3 large carrots, roll cut into 1/2” pieces -3 celery ribs, sliced to 1/4” pieces -1 sweet onion, cut to large chunks -1/2 cup frozen peas -2 tbs tomato paste -1 tbs minced garlic -1 tsp onion powder -1 tsp garlic powder -1 tsp smoked paprika -1 tsp dried thyme -1 tsp dried rosemary -1/2 tsp salt -1/2 tsp black pepper -1 dried bay leaf -optional cornstarch slurry (1 tbs cornstarch + 2 tbs water) Instructions: -add all of the ingredients into the pressure or slow cooker; pressure cook on high for 30 min or slow cook on low for 6 hours until tender -if pressure cooking, remove pressure, add cornstarch slurry, and sauté for 5 min until sauce simmers and thickens -if slow cooking, add cornstarch slurry at the end and continue to cook for another 30 min until sauce thickens -prepare rice according to package instructions You can now access this full recipe along with all of my other recipes on my recipe subscription website!
