Ingredient
Beef 1.5 kg
Oil half cup
2 small Cinnamon stick
3 tbsGinger garlic paste
1 litre water
Nihari masala
2 tbs dry coriander
1tbs cumin powder
1 tbs fennel seeds (saunf)
3 taiz patta
2 badiyan
1 tbs ginger powder
1 tbs kachri powder(v.imp)
2 cinnamon stick
2 black cardamom
5-6 green cardamom
1 tbs black pepper
Whole red mirch 6-7
1 tbs red mirch powder
Half tbs turmeric powder
1 tbs paprika powder
For Tarri / tarka
1 cup oil
Garlic paste
1 tbs paprika powder
2-3tbs water
Process
In the pressure pur oil cinnamon stick and ginger garlic paste. Fry it for 2 min then add beef.
Fry beed until it changes its color then add nihari masala.
Grind all the masala mentioned above and make a fine powder and add salt according to your taste.
Now after adding the nihari masala and salt in the beef add 1 liter warm water in it and leave it on pressure for 40-45 minutes.
5 minutes on high flame then low the flame and let it cook on medium to low flame.
After 45 minutes remove it from pressure and cook it for good 7 - 8 minutes.
Mix half cup white flour (not maida) in 1 cup water and add it into the nihari and keep stirring so that it don't form any lumps.
Now for tarka/ tarri. Heat the 1 cup oil add garlic paste. Fry it for 1-2 minutes then mix paprika powder in 2-3tbs water and add in the oil. Let it settle for 4-5 minute. Add a pinch of salt in the oil.
Garnish it with ginger, green chilli and some lemon. Serve it with naan and some chaat masala ❤
