This is seriously the best Chicken Curry Salad from a long lost 1970s Restaurant! It's so tasty and comes from Scandia, a long lost restaurant in Los Angeles. Here is your recipe!! ?
Curry Dressing:
1/2 Cup Mayonnaise
1/2 Cup Sour Cream
1 TSP Curry Powder
1 TSP Lime Juice
Dash Salt and Pepper
Salad:
2 Cups Cooked, Diced Chicken Breast
1/4 Cup Diced Celery
1/2 Cup Fresh Grated Coconut
1 TBS Chutney (Major Grey suggested)
Mix dressing ingredients together in a small bowl and set aside.
In a larger bowl, combine salad ingredients. Add dressing and mix well. Scoop chicken salad into one half of a seeded cantaloupe. This recipe will make enough for 2 cantaloupe halves.
