Next add in the curry leaves and saute. Next add chopped shallots and saute until they turn slightly soft. Add in crushed garlic and ginger and saute until the raw smell is gone. Add in slit green chillies and saute it. if you want the curry to be more spicy, you can add more chillies. Add in the sliced onions next, some salt and saute until they turn slightly brown. Add in turmeric powder, coriander powder, fennel powder and Garam Masala and saute until the raw smell is gone. Add in some crushed black pepper and saute for couple of minutes. Next add in the chicken pieces and coat them well with the masala. Cover and cook this on a medium flame. Stir occasionally. Add in the thin coconut milk, mix well and cook again. We will cook the chicken until well done and the coconut milk gets fully absorbed. Now we will add the thick coconut milk and cook for 2 more minutes and turn off the flame. Finally add in some more crushed black pepper, coconut oil and fresh curry leaves and mix well. Pepper Chicken is ready to be served. Do try this recipe and let me know how it turns out.
