Makhni Beef Serves 5-6 Recipe in English: Ingredients: -Laung (Cloves) 5-6 -Darchini (Cinnamon sticks) 2 -Badi elaichi (Black cardamom) 2 -Hari elaichi (Green cardamom) 2-3 -Kaju (Cashew nuts) 18-20 -Zeera (Cumin seeds) ½ tbs -Hari mirch (Green chillies) 2-3 -Podina (Mint leaves) 10-12 leaves -Hara dhania (Fresh coriander) 2-3 tbs -Water ¼ Cup or as required -Beef boneless cubes 750g -Pyaz (Onion) sliced 1 large -Tamatar (Tomatoes) chopped 2 medium -Haldi powder (Turmeric powder) ½ tsp -Namak (Salt) 1 tsp or to taste -Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs -Water 2 Cups or as required -Cooking oil 1/3 Cup -Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs -Tikka masala 1 tbs -Sabut dhania (Coriander seeds) roasted & crushed 1 tbs -Garam masala powder 1 tsp -Lal mirch powder (Red chilli powder) ½ tsp or to taste -Dahi (Yogurt) whisked ½ Cup -Cream ¼ Cup -Hara dhania (Fresh coriander) chopped 1-2 tbs -Hara dhania (Fresh coriander) chopped -Makhan (Butter) Directions: -In a spice mixer,add cloves,cinnamon sticks,black cardamom,green cardamom,cashew nuts,cumin seeds and blend to make a powder. -Add green chillies,mint leaves,fresh coriander leaves and water,blend well & set aside. -In a pressure cooker,add beef,onion,tomatoes,turmeric powder,salt,ginger garlic paste and water,mix well & bring it to boil,cover & pressure cook on medium flame for 20-25 minutes or until meat is tender. -Add cooking oil,mix well & cook on high flame until water is reduced (4-5 minutes). -Add kashmiri red chilli powder,tikka masala,coriander seeds,garam masala powder and red chilli powder,mix well and cook for 2-3 minutes. -Turn off the flame,add yogurt,blended paste then turn on the flame,mix well & cook until oil separates (2-3 minutes). -Turn off the flame,add cream and mix well then turn on the flame and cook on low flame for 1-2 minutes. -Add fresh coriander & mix well. -Garnish with fresh coriander,butter & serve! Recipe in Urdu: Ajza: -Laung (Cloves) 5-6 -Darchini (Cinnamon sticks) 2 -Badi elaichi (Black cardamom) 2 -Hari elaichi (Green cardamom) 2-3 -Kaju (Cashew nuts) 18-20 -Zeera (Cumin seeds) ½ tbs -Hari mirch (Green chillies) 2-3 -Podina (Mint leaves) 10-12 leaves -Hara dhania (Fresh coriander) 2-3 tbs -Water ¼ Cup or as required -Beef boneless cubes 750g -Pyaz (Onion) sliced 1 large -Tamatar (Tomatoes) chopped 2 medium -Haldi powder (Turmeric powder) ½ tsp -Namak (Salt) 1 tsp or to taste -Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs -Water 2 Cups or as required -Cooking oil 1/3 Cup -Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs -Tikka masala 1 tbs -Sabut dhania (Coriander seeds) roasted & crushed 1 tbs -Garam masala powder 1 tsp -Lal mirch powder (Red chilli powder) ½ tsp or to taste -Dahi (Yogurt) whisked ½ Cup -Cream ¼ Cup -Hara dhania (Fresh coriander) chopped 1-2 tbs -Hara dhania (Fresh coriander) chopped -Makhan (Butter) Directions: -Spice mixer mein laung,darchini,badi elaichi,hari elaichi,kaju aur zeera dal dein aur ache tarhan blend ker ka powder tayyar ker lein. -Hari mirchein,podina,hara dhania aur pani dal ker ache tarhan blend ker lein & side per rakh dein. -Pressure cooker mein beef,pyaz,tamatar,haldi powder,namak,adrak lehsan paste aur pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiyani ancch per 20-25 minutes ya gohst gul janay tak paka lein. -Cooking oil dal ker ache tarhan mix karein aur tez ancch per pani reduce ho janay tak paka lein (4-5 minutes). -Kashmiri lal mirch,tikka masala,sabut dhania,garam masala powder aur lal mirch powder dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein. -Chulha bund ker dein,dahi aur blended paste dal dein,chulha on karein aur ache tarhan mix ker lein aur oil alag ho janay tak paka lein (2-3 minutes). -Chulha bund ker dein,cream dal ker ache tarhan mix karein,chulha on karein aur halki ancch per 1-2 minutes kliya paka lein. -Hara dhania dal ker ache tarhan mix ker lein. -Hara dhania aur makhan dal ker serve karein!
