Cut a medium avocado in half and remove the pit. Dice into large cubes. Peel and dice cucumber. 2. Place coconut milk, water, diced avocado, diced cucumber, spinach and stevia drops to a blender cup and blend with a stick blender or full sized blender. 3. Serve immediately.
