Sola: Ingredients: Meat (mutton/beef) ½ kg Rice ½ kg Garlic paste 1 tsp Ginger paste 1 tsp Green chilies 10-12 Onion 2 Black pepper 1 tsp Cloves 4 Cinnamon 2 sticks Turmeric 1 tsp Dill 4 bunch Coriander 4 bunch Oil 1 cup Clarified butter for dum Grind onion, garlic and ginger then add it in meat and let it get tender. When water slightly reduces then add turmeric and let it cook. When meat get tender then add oil and saute well. Add all spice as well. Now cut soya and coriander add it and saute well then add rice water. When it starts boiling then add rice and let it simmer. Add clarified butter at end. Serve with onion and tomato. Bhaat Ka Meetha: Ingredients: Broken rice ½ cup Milk 1 liter Sugar 2 cups Clarified butter 250 gram Raisins, coconut 1 cup Pistachios, almonds 100 gram Dry milk 1 cup Whole dried milk 250 grams Sterling silver leaves 2 Cardamom ½ tsp Method Add rice in milk and leave it in fridge for overnight. Now put them in pan and whisk them continuously. When it gets dried then add sugar, clarified butter and cardamom and saute them well. When oil comes up then add whole dried milk, dry milk, raisins, almonds and pistachios. Now take out in dish and garnish with sterling silver leaves.
