Hey Guys I am going to show you how you can make 2 simple and easy vegan summer salad with simple ingredients in no time.
For the first recipe which I call carrot orange and avocado salad we will need
2 Oranges β peeled and segments separated.
3 carrots β halved length ways and sliced with a peeler.
70 g bag of rocket
2 avocados stoned and sliced
1 tbsp of olive oil.
To prepare this we are going to take on a shallow bowl and put orange segments along with carrots, rocket and avocado in there. Whisk orange juice, Zest and oil together. Toss it together with salad and season it with salt and pepper. If you donβt like salt in your salad then you can skip seasoning and enjoy the cool and refreshing taste of salad as it is.
Small bunch of flat leaf parsley. I have separated parsley leaf from stalk. Then finely chopped stalk and roughly chopped leaves.
1 lemon juice
3 tbsp of capers drained and finely chopped.
Β½ shallot finely chopped
6 tbsp olive oil
200 g cherry tomatoes, halved
4 little gem lettuce leaves separated.
To prepare this we will put finely chopped stalks in a large bowl and stir it in the lemon juice, chopped capers and shallot. Whisk in the olive oil and season. Then toss through the tomatoes along with chopped parsley leaves and lettuce. And here we go our parsley and caper salad is ready. This taste best when served immediately after preparing. It can get bit soggy after some time and might not taste that crunchy so make sure you prepare it just when you want to eat it.
