Spicy Refreshing Thai Cucumber Salad with Lime Dressing
INGREDIENTS:
1 English cucumber - grated in approx 2" strips and drained for 30 minutes
1/4 cup thinly sliced red onions
1/4 cup grated carrots
2-3 greens of garden onions - about 2" strips
zest of lime
Spicy Lime Salad Dressing:
2 tbsp. rice vinegar
2 tbsp. fish sauce
2 tbsp. oil - vegetable or a bland oil
1 tbsp. honey
1 tsp. red pepper flakes
juice of a lime
