RECIPE!
4 chicken Breast
2 TBSP butter
2 TBSP olive oil
1 small onion chopped
12 oz blueberries
1/2 CUP vinegar
1/3 CUP Maple syrup
1 TBSP Rosemary
Blueberry Goat Cheese
1 TBSP honey
salt and pepper to taste
1. Stuff chicken with goat cheese and salt and pepper the outside
2. Melt 1 TBSP butter and 1 TBSP olive oil in pan over meduim high heat
3. Sear both sides of chicken. Set aside.
4. Heat up remaining olive oil and butter and cook chopped onions
5. Add blueberries, maple syrup, vinegar, rosemary, salt and pepper
6. Bring to a boil and then simmer for 10 minutes
7. pour the mixture over the chicken
8. bake chicken at 350 degrees f or until center of chicken reaches 165 degrees f
