CORNED BEEF QUICHE INGREDIENTS 2 pie crusts 4 eggs 1/2 cup heavy whipping cream 1 1/2 cups boiled potatoes cut into cubes 1 1/2 cups chopped corned beef salt and pepper 2 1/2 cups shredded cheddar cheese 1/4 cup baby arugula or baby spinach torn DIRECTIONS Mix together eggs, heavy cream, potatoes, corned beef, salt and pepper and 1 1/2 cups of the cheese. Pour into prepared pie shells. Top with spinach or arugula and remaining cheese. Bake at 400 F for 20-25 minutes
