I miss having a great true Mexican Barbacoa tacos, so i m going to teach you step by step all the secrets that no body tell's you for making this authentic true Mexican beef tacos. I have decided to make it with beef cheeks. The beef cheek are incredibly tender and full of flavor. It’s marbled with fat and has a richness like no other cut of beef. As well i'll be teaching how to make the original corn tortilla with all the steps.
This Barbacoa tacos has an incredible taste! True corn tortilla, Extremely Soft meat tossed in an incredible flavour loaded with guacamole, chimichurri sauce, quezo fresco and more.

First Step the beef cheeks:
Beef cheeks cleaned 1 Kg
Carrots diced 100 grams
Onions diced 100 grams
Leeks Diced 100 grams
Celery diced 100 grams
Garlic gloves 50 grams
Veal jus 200 grams
Olive oil 2 Tbsp
Salt 2 tbsp

Second step the corn tortilla:
Masa harina 130 grams
Water 70 grams ( can be adjusted)
Salt 1 tsp
Pickled onions recipe:
Onion sliced 1 onion
Vinegar white 50 grams
Water 100 grams
White Sugar 50 grams
Beetroot sliced 100 grams
Salt 1 tsp
Onion is the perfect topping. In a bowl pour in the vinegar, salt and sugar then whisk. Add in the Sliced onion rings and small diced beetroot. Cover and rest in the chiller for the next day.
