Do you know how hard it is to roll a fricken burrito? well I can tell you it's hard, and of course I made a hack job of this one. That being said though, my spicy beef burrito does taste delicious. that much is certain. Is it Mexican? probably not, did I make a scuffed looking half baked pile of mess? Of course I did. But you know what, i've never made a burrito before so cut me some slack. I also made this for a subscriber. Now you all know how useless I am at doing requests, but long time subscriber Kat Cymru has been asking for this for like over a year. So This one is for her...so she stops nagging.
The important thing about this video is I made a delicious tex mex(ish) style burrito, and it tasted amazing. I have a confession though guys, I've never made or tried a burrito before! (I don't know why either). So this is kind of my take on it, and hopefully you like it. I will be revisiting the burrito at a later date once i've tried the real deal. But listen, I like to experiment from time to time and stretch my culinary skills.
OK so to my my slightly scuffed spicy beef burritos you will need
makes about 3
►About 400g of steak (I used flat iron)
►2 garlic cloves minced
►1 tsp of ground cumin
►1/2 tsp of cayenne pepper (add more if you want it hotter)
►2 tsp of dried oregano
►2-3 tbsp of olive oil
►1 red pepper
►1 whole med red onion (use half for guacamole)
►1 hot red chilli (jalepeno would be good)
►Diced lettuce
►A bag of grated cheese blend or regular cheddar
►A can of re fried beans or make your own
►Pickled jalapenos
►Sour cream to serve
For the guacamole
►3 ripe avocados
►About 3 tbsp of freshly chopped coriander
►1 med tomato deseeded and diced small
►1/2 red onion finely diced
►Juice of 1 lime
►Salt to taste
►Flour or corn tortillas (large ones if you can get them, which evidently I could not)
