Chicken Chinthamani is famous dish in Coimbatore, Tamilnadu. Chicken Chinthamani recipe needs only a few ingredients & very easy to prepare. The base for Chinthamani is shallots & dry red chillies. This is a spicy chicken fry recipe. Serve as side dish with rice or chapati.
INGREDIENTS
Chicken- 1 kg with bones, cut into small pieces
Shallots- 250 gm or 3 cups(skin peeled), cut into half
Dry red chillies- 30 deseeded & broken into pieces
Ginger- Garlic- 2 tsp crushed
Turmeric- 3/4 - 1 tsp
Mustard- 1/2 tsp
Oil- 4 Tbsp (Preferably Gingelly oil/ നല്ലെണ്ണ)
Curry leaves- 4 Springs
Salt to taste
